Salsa Scrambled Eggs

A little cheese and fresh salsa turns boring eggs into a mouthwatering meal. Serve in warm tortillas for delicious breakfast tacos.

Ingredients

  • 2 large eggs
  • 1 tbsp shredded cheese
  • 1 tbsp Fresh Cravings Restaurant Style Salsa
  • 2 corn tortillas warmed
  • 1 tsp fresh cilantro

INSTRUCTIONS

  1. Beat eggs in a bowl. Coat a small non-stick skillet with cooking spray and heat over medium heat. Add the eggs and cook, stirring, until almost firm; stir in cheese and salsa. Spoon onto tortillas and top with cilantro.
  2. To warm tortillas, wrap in barely damp paper towels and microwave on high for 30 to 45 seconds.
  3. Spoon salsa eggs into tortillas and serve.
